Kadai Mushroom Ingredients
– Button mushrooms (200-250g)
– Capsicum/bell pepper (1 medium to large)
– Onion (1 medium)
– Tomato puree (2 medium to large tomatoes)
– Ginger-garlic paste (1 teaspoon)
– Oil (3 tablespoons)
– Kasuri methi (dry fenugreek leaves) (1 teaspoon)
– Cream (optional) (1-2 tablespoons)
– Garam masala powder (optional) (¼ teaspoon)
– Salt (to taste)
Kadai Masala Recipe
– Coriander seeds (1 tablespoon)
– Cumin seeds (½ teaspoon)
– Dry red chilies (3-4)
– Cloves (2)
– Cinnamon (½ inch)
– Green cardamom (1)
– Black pepper (3-4)
– Mace (optional) (1 strand)
Kadai Masala Instructions
1. Begin by dry roasting all the spices for the kadai masala until they release their fragrant aroma.
2. Once cooled, grind the roasted spices to a semi-fine powder and set aside.
3. In the same grinder jar, blend the tomatoes into a smooth puree without adding water.
4. Slice the mushrooms and capsicum thinly, and finely chop the onion.
5. Heat oil in a kadai or pan, and sauté the sliced mushrooms until they turn golden brown. Set aside.

6. In the same oil, sauté the chopped onions until translucent.
7. Add ginger-garlic paste and sauté until the raw aroma dissipates.
8. Stir in the tomato puree and cook until the mixture releases oil from the sides.
9. Add the sliced capsicum and sauté for 5-6 minutes on low heat.
10. Introduce the ground kadai masala into the pan, mixing it thoroughly with the vegetables.
11. Pour in water, season with salt, and simmer until the gravy thickens slightly.
12. Fold in the sautéed mushrooms and crushed kasuri methi.
13. Optionally, add cream to mellow the tanginess or sprinkle garam masala for an extra flavor boost.
14. Serve the aromatic Kadai Mushroom hot, accompanied by your choice of bread and garnished with ginger julienne and fresh coriander leaves.
